• 400 g of coarsely grated steppe cheese;

• 400 g of coarsely grated Gruyère cheese;

• 1 cup (tea) of white wine;

• 50 mL of extra virgin olive oil Lagar H Blend from Safra for a smooth touch or Monovarietal from Safra Koroneiki for a more intense flavor;

• 1 clove of garlic;

• 1 tablespoon of cornstarch;

• Freshly grated nutmeg to taste;

• Homemade Italian bread to serve;

Method of preparation

1) Cut the bread into medium cubes so that each piece has a core and skin and set aside.

2) Peel, cut in half and rub the garlic halves on the inside (bottom and sides) of a medium pan (if you prefer, use a fondue pan).

3) In a bowl, mix the grated cheese and Lagar H olive oil.

4) Mix the cornstarch with the white wine in the pan and place over low heat to heat – place on the smallest burner on the stove. As soon as the first bubbles rise, gradually add the grated cheese, stirring well with the wire whisk to melt it and form a smooth cream.

5) At low temperature, add the cheese little by little, mixing well. Season with nutmeg to taste.

6) Keep the pan on low heat and stir well for two minutes. Take the pan to the table (or rechaud ). Serve immediately with bread cubes or grilled vegetables.
