Arbequina tends to produce very smooth oils, but not here. Because they have a more delicate flavor, at Lagar H, these olives are harvested early and only the oil extracted in the first week of harvest is selected to be part of our collection. This practice results in a product of great sensory complexity, which evolves from medium intensity of bitterness and slight spiciness to a pleasant sensation of fresh herbs, green banana peel and slightly floral.
